Paul is a graduate of the Culinary Institute of America in Hyde Park, NY. He has worked in many of the Hudson Valley's finest restaurants including Cathryn's Tuscan Grill and The Ward's Bridge Inn. He believes in using local ingredients to create contemporary dishes impired from various regions of the world. When he is not in the kitchen, Paul enjoys playing golf and billiards.
Cathryn opened her second restaurant in Marlboro to be closer to the farms and wineries of the Hudson Valley. As a Hudson Valley Restaurant Week advisor she has seen the growth in the 'Eat Local' movement.
The owner of Cathryn's Tuscan Grill in Cold Spring for 19 years, she's using local resources to create a globally-inspired dishes from around the world.
In addition to meats, cheeses, and produce, the restaurant features local wines and a broad selection of beers and cider from Valley breweries.
